Six techniques for better soup
Small habits that make a big difference to flavour and texture.

1. Soften slowly
Give onions 8–10 minutes over a medium-low heat. Rushing them is the most common reason soup tastes flat.
2. Toast your spices
Thirty seconds in hot oil wakes up ground spices.
3. Stagger your vegetables
Roots go in early; greens go in late. Broccoli needs about 6 minutes, spinach about one.
4. Mind your liquid
Lentils and grains absorb roughly two to three times their dry weight in liquid. Add more stock as they cook.
5. Blend carefully
Let soup cool slightly, never fill a blender more than half-full with hot liquid, and hold the lid down with a tea towel.
6. Finish with acid
A squeeze of lemon or a splash of vinegar just before serving makes everything taste more like itself.
